Have you ever met someone who dislikes a caprese salad? Me either. There is something about the combination of tomato, mozzarella, and fresh basil that seems to get everyone excited! Including myself. Which is why I decided to share my version, as well as a fun twist on this popular summer salad.
Pictured is the classic caprese. Okay, I understand many people prefer it without the balsamic and oregano. Personally, I think the balsamic is incredible on this salad. Please feel free to leave out any ingredients you dislike!
Classic caprese for 2:
- 2 large heirloom tomatoes
- 8 slices of fresh mozzarella (if vegan, sub vegan mozz or omit cheese)
- 8 fresh basil leaves (the smaller leaves the better)
- Pinch of dried oregano
- Olive oil
- Aged balsamic vinegar
Slice your tomatoes horizontally. Each tomato should give you 4 good slices. Now layer the slices of tomato and mozzarella on your serving plate. Sprinkle with salt, cracked black pepper, and a pinch of dried oregano. Drizzle the balsamic and olive oil over the top (not too much!) Finally, tuck in your basil leaves behind each tomato. Thats it! You now have a show stopping salad that everyone will love.
A peachy twist on the caprese!
This is a quick and fun new twist on the classic caprese. I utilized seasonal ingredients from the farmers market yesterday and served it to market guests on a skewer! This is a fun appetizer for any dinner party and there are many variations. Try different varieties of cheese for example! Make as many skewers as you think you will need to serve as an appetizer for family and friends.
- Cherry tomatoes
- Mozzarella or any cheese you prefer (be sure to choose a cheese that will stay on a skewer. If it is too firm it will break off)
- Peaches or nectarines
- Fresh basil
- Dried oregano
- Aged balsamic
- Cocktail skewers
Start by placing a cherry tomato on the skewer, followed by a piece of peach or nectarine, a piece of basil, and lastly your piece of cheese. Drizzle with the aged balsamic and olive oil, sprinkle with dried oregano, and salt/pepper. Repeat on the next skewer. You could also try wrapping the peach or nectarine with a slice of prosciutto, yum! Be sure to serve napkins with the skewers, they will drip!
